Mixed Mushrooms in Balsamic Butter

This recipe from Andrew Sterman has been one of our favourites. It’s balanced, health-supportive, ingredients are inexpensive, easy to make, tastes wonderful, and so gut healthy! Ingredients
mushrooms of your choice | 1 pound
olive oil | 1 Tbsp
butter | 2 Tbsp
balsamic vinegar | 3 Tbsp
red wine (or red wine vinegar) | 1 Tbsp
mixed herbs | 1/2 tsp each if dried, more if fresh
Instructions (condensed version):
Heat a heavy pain, add the olive oil, then the butter. Add the mushrooms, stir. Keep heat high enough to evaporate the moisture that the mushrooms give off as they cook.
Add the balsamic vinegar and the red wine (use red wine vinegar if preferred)
Add herbs if desired, such as rosemary and oregano. Salt is not necessary
If the pan sauce is thin, raise heat to reduce and add another bit of butter to tighten the sauce around the mushroom
Serve as a side dish with greens and proteins such as a bean dish, fish, chicken or meat.
